I usually only urinate 2 to 3x a day. I started taking NAC, Thorne 500mg twice a day and now I urinate like 10x a day. Is this normal and any explanation why? Thanks

No it is not normal for NAC to cause that. Stop taking it for several weeks and see if you normalize. If you don't, then it has nothing to do with NAC.

Do not keep taking supplements that cause weird side effects for you just because internet says they are good. That's how people get kidney or liver failure from "all natural" supplements.
