Delayed IgG4 food sensitivity testing, while not 100% accurate, can help pinpoint those delayed symptoms. I also test for inflammatory cytokines but haven't seen any of them elevated enough to pinpoint a culprit nor have I observed any untoward reactions to foods. That doesn't mean I don't have some type of low-grade chronic immune reaction though. It just means I cannot determine a cultprit like in your case. Wish it were that easy.
Other inflammatory markers are sed rate (ESR) and ferritin. Also test for d-dimer and ANA. In my case, both low normal. Only hsCRP is slightly elevated. Wish it was more specific.
